The Mommy Files: Passover Cooking

This morning on NPR, I heard a story about a family making Matzolah, a now commercially sold granola made with matzo.

And it got me thinking about cooking for Passover.

Then when I started poking around, I realized there’s actually quite a bit of food cooked using the staple ingredient of matzo.

Of course, my first stop was the Martha Stewart website … because, well, Martha has food for everyone. And she came through like a champ, with 20 Passover desert recipes that look delish!

Cooking for a vegetarian? Try one of these 25 vegetarian passover recipes; from spicy baked zucchini sticks to cauliflower crust pizza, there’s a few things here I definitely want to try.

Frankly, I might top it all off with this dark chocolate, coconut, banana, vegan matzah brei! Yum …

Do you have any good Passover recipes?

I love matzo ball soup — my family and I always order it at the local diner. I should learn how to make that soup! It probably isn’t hard.

What an amazing collection of recipes. I hope some of them work with oat gluten-free matzos.
