I’m the lucky woman hosting Thanksgiving this year, and that means catering to more than a few vegetarians.
But coming up with vegetarian Thanksgiving recipes is not always easy. I have a few favorites that I tend to make every year, Stuffed Acorn SquashÂ and Wild Rice and Brown Rice Stuffing with Cranberries and ApplesÂ (shown above).
This year I’d like to also try Butternut Squash Cannolis, Old Fashioned Chocolate Pudding Pie, Pumpkin Tiramisu, or perhaps this Roasted-Parsnip Bread Pudding.
My mouth is clearly watering at this point. I’m a big turkey roaster and I slather mine with a butter maple glaze and bacon … making it a heart-attack waiting to happen. But it’s good people, it’s good.
But that doesn’t mean I can’t accommodate those veg-heads in the family.
Do you have any good vegetarian recipes to share? I’m always open to something new … and frankly, I’ve been meaning to cook a little more veggie-based for my own family. And has anyone made this Pumpkin Dip? I’m thinking it might be a nice treat for the kids.
