It took me a long time to realize that you can use your microwave for more than heating up Hot Pockets. But, now that I’ve discovered how awesome it is to cook with my microwave, I can’t believe I didn’t try this sooner.
Microwave cooking is great for those nights when you’re too tired to spend a lot of time in the kitchen, but you don’t want to splurge for takeout for your family.
Some of my favorite microwave recipes are:
- Microwave Lasagna -I’ve tried this recipe with spinach, with meatballs, and as a simple four-cheese lasagna, so feel free to experiment.
- Microwave Brownies - My son likes these best with frosting and sprinkles, but they are good sprinkled with a bit of powdered sugar too.
- Microwave Chocolate Chip Cookies – I normally make mine as bar cookies because I think it’s easier. You will need to increase the cooking time by a minute or so if you do this, however.
I’m also a huge fan of cloth potato bakers. These make fluffy baked potatoes in just a few minutes and work well for microwaving carrots, sweet corn, and other veggies too.
I purchased my bag at a local craft fair, but there are several for sale on Etsy. If you have basic sewing skills, you can also download instructions to make your own.
Aside from being a great time saver, microwaving cooking is also a good way to get older children interested in helping with meal preparation. I don’t trust my eight-year-old near the stove, but I’ve been letting him use the microwave with supervision.
